Description

Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1/2 cup cream cheese, softened
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time.
  4. Stir in the lemon zest and juice.
  5. Mix in the softened cream cheese until fully combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the fresh blueberries gently.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 55-65 minutes, or until a toothpick inserted comes out clean.
  9. Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

This bread can be stored in the fridge for up to a week. You can also use frozen blueberries if fresh ones aren’t available.
