- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tablespoon lemon zest
- 1/4 cup fresh lemon juice
- 1/2 cup cream cheese, softened
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time.
- Stir in the lemon zest and juice.
- Mix in the softened cream cheese until fully combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the fresh blueberries gently.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55-65 minutes, or until a toothpick inserted comes out clean.
- Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Notes
This bread can be stored in the fridge for up to a week. You can also use frozen blueberries if fresh ones aren’t available.
