A refreshing dessert that combines zesty lemon and sweet blueberries with creamy ricotta and whipped cream layered in lasagna noodles.

- 9 lasagna noodles
- 2 cups ricotta cheese
- 1 cup powdered sugar
- 2 cups whipped cream
- 1 tablespoon lemon juice
- 1 tablespoon lemon zest
- 2 cups blueberries
- 1/4 cup lemon pudding mix
Instructions
- Cook the lasagna noodles according to package instructions. Drain and lay them flat on a clean kitchen towel to cool.
- Prepare the ricotta mixture by combining ricotta cheese, powdered sugar, lemon juice, and lemon zest in a mixing bowl. Whisk until smooth.
- Fold in whipped cream into the ricotta mixture using a spatula.
- Layer a generous layer of the ricotta mixture on the bottom of a 9×13-inch baking dish.
- Add a layer of lasagna noodles over the ricotta, followed by blueberries. Repeat until all ingredients are used, finishing with whipped cream on top.
- Chill for at least 4 hours in the refrigerator.
- Serve with additional blueberries and lemon zest as garnish.
Notes
This dessert can be prepared a day in advance for convenience. Consider using different fruits or adding layers of crushed graham crackers for variation.
