Description

A refreshing dessert that combines zesty lemon and sweet blueberries with creamy ricotta and whipped cream layered in lasagna noodles.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 1 cup powdered sugar
  • 2 cups whipped cream
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 2 cups blueberries
  • 1/4 cup lemon pudding mix

Instructions

  1. Cook the lasagna noodles according to package instructions. Drain and lay them flat on a clean kitchen towel to cool.
  2. Prepare the ricotta mixture by combining ricotta cheese, powdered sugar, lemon juice, and lemon zest in a mixing bowl. Whisk until smooth.
  3. Fold in whipped cream into the ricotta mixture using a spatula.
  4. Layer a generous layer of the ricotta mixture on the bottom of a 9×13-inch baking dish.
  5. Add a layer of lasagna noodles over the ricotta, followed by blueberries. Repeat until all ingredients are used, finishing with whipped cream on top.
  6. Chill for at least 4 hours in the refrigerator.
  7. Serve with additional blueberries and lemon zest as garnish.

Notes

This dessert can be prepared a day in advance for convenience. Consider using different fruits or adding layers of crushed graham crackers for variation.
