Deliciously soft and chewy cookies bursting with bright lemon flavor, topped with a silky glaze.
Ingredients
- Lemon cake mix – 1 box (15.25 oz)
- Cream cheese, softened – 4 oz
- Unsalted butter, softened – ¼ cup
- Egg, room temperature – 1 large
- Vanilla extract – 1 teaspoon
- Powdered sugar – ½ cup (for rolling)
- Butter – 2 tablespoons (for glaze)
- Powdered sugar – 1 cup (for glaze)
- Milk – 2–3 tablespoons
- Vanilla extract – ½ teaspoon
Instructions
- Preheat your oven to 350°F (175°C). In a large bowl or stand mixer, combine the lemon cake mix, softened cream cheese, butter, egg, and vanilla extract. Mix until fully incorporated, resulting in thick and sticky dough.
- Using a medium cookie scoop, scoop the dough and roll it into balls, coating each ball in powdered sugar.
- Place the dough balls onto a parchment-lined baking sheet, leaving space in between. Bake for 9-10 minutes until they puff up and develop cracks on top; remove while still soft in the center.
- Allow them to cool completely on a wire rack before glazing.
- For the glaze, melt 2 tablespoons of butter and whisk in powdered sugar, vanilla, and milk until smooth. Adjust milk for consistency.
- Dip the cooled cookies in the glaze or drizzle it on top. Let the glaze set before serving.
Notes
Chill the dough for 20-30 minutes if too sticky. Add lemon zest or mix in chocolate chips for variation.
