Instructions
- Mix dry ingredients. In a large bowl, whisk together the flour, sugar, salt, and baking powder until evenly combined.
- Combine wet ingredients. In a separate bowl, whisk melted butter, milk, eggs, vanilla extract, and lemon zest until smooth.
- Bring dough together. Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Preheat oil for frying to 350°F (175°C).
- Shape the dough into balls, about 1.5–2 inches in diameter.
- Fry until golden brown, approximately 2–3 minutes per side.
- Drain on paper towels or a wire rack for 5–8 minutes.
- Fill each donut with lemon curd using a piping bag.
- Dust with powdered sugar and serve warm.
