Description

A vibrant and flavorful dish combining tender chicken marinated in lemon and garlic, roasted alongside golden baby potatoes and crisp green beans.


Ingredients

  • 4 boneless, skinless chicken breasts (approximately 1.5 lbs)
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 pound baby potatoes, halved
  • 8 ounces green beans, trimmed
  • Fresh parsley and lemon wedges for garnish

Instructions

  1. Preheat your oven to 425°F. Prepare a large sheet pan by lining it with parchment paper or foil.
  2. Prepare the marinade by whisking together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper in a large bowl.
  3. Marinate the chicken breasts in the marinade for at least 30 minutes.
  4. Season the halved baby potatoes with olive oil, salt, and pepper in another bowl.
  5. Spread the seasoned potatoes cut side down on the sheet pan and roast in the oven for 15 minutes.
  6. Add the marinated chicken and green beans to the pan, drizzling with any remaining marinade.
  7. Return the pan to the oven and roast for an additional 20 minutes, until chicken reaches an internal temperature of 165°F.
  8. Broil for 2-3 minutes for extra color, watching closely.
  9. Serve on plates, garnished with parsley and lemon wedges.

Notes

For maximum flavor, marinate the chicken overnight. Customize vegetable choices as desired.
