- 4 boneless, skinless chicken breasts (approximately 1.5 lbs)
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 3 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 pound baby potatoes, halved
- 8 ounces green beans, trimmed
- Fresh parsley and lemon wedges for garnish
Instructions
- Preheat your oven to 425°F. Prepare a large sheet pan by lining it with parchment paper or foil.
- Prepare the marinade by whisking together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper in a large bowl.
- Marinate the chicken breasts in the marinade for at least 30 minutes.
- Season the halved baby potatoes with olive oil, salt, and pepper in another bowl.
- Spread the seasoned potatoes cut side down on the sheet pan and roast in the oven for 15 minutes.
- Add the marinated chicken and green beans to the pan, drizzling with any remaining marinade.
- Return the pan to the oven and roast for an additional 20 minutes, until chicken reaches an internal temperature of 165°F.
- Broil for 2-3 minutes for extra color, watching closely.
- Serve on plates, garnished with parsley and lemon wedges.
Notes
