- ½ cup unsalted butter, melted
- 1 cup all-purpose flour
- 1½ cups granulated sugar, divided
- 1 tbsp baking powder
- ¼ tsp salt
- 1 cup whole milk
- 1 tsp vanilla extract
- 21 oz can lemon pie filling
- Lemon zest (optional)
- Powdered sugar for dusting
Instructions
- Preheat oven to 350°F (175°C). Pour melted butter into a 9×9-inch baking dish and tilt to coat evenly.
- Whisk together flour, 1 cup sugar, baking powder, and salt. Add milk and vanilla; stir gently until just smooth.
- Pour batter directly over the melted butter. Do not stir.
- Spoon lemon pie filling evenly over the batter. Sprinkle the remaining ½ cup sugar and lemon zest on top.
- Bake uncovered for 45–50 minutes, until the top is golden and crackled, center is set but soft, and edges are bubbling gently.
- Let the cobbler rest for 10 minutes before serving.
- Dust generously with powdered sugar and serve warm.
