Description

A delightful cobbler with a golden, crackly top, soft cake layer, and a hidden pudding-like lemon sauce underneath. Perfect for any occasion.


Ingredients

  • ½ cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 1½ cups granulated sugar, divided
  • 1 tbsp baking powder
  • ¼ tsp salt
  • 1 cup whole milk
  • 1 tsp vanilla extract
  • 21 oz can lemon pie filling
  • Lemon zest (optional)
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Pour melted butter into a 9×9-inch baking dish and tilt to coat evenly.
  2. Whisk together flour, 1 cup sugar, baking powder, and salt. Add milk and vanilla; stir gently until just smooth.
  3. Pour batter directly over the melted butter. Do not stir.
  4. Spoon lemon pie filling evenly over the batter. Sprinkle the remaining ½ cup sugar and lemon zest on top.
  5. Bake uncovered for 45–50 minutes, until the top is golden and crackled, center is set but soft, and edges are bubbling gently.
  6. Let the cobbler rest for 10 minutes before serving.
  7. Dust generously with powdered sugar and serve warm.

Notes

Serve with vanilla ice cream, whipped cream, or Greek yogurt for a delicious combination.
