Description

A vibrant salad combining sweet mango, crunchy cucumber, and creamy avocado for a refreshing dish perfect for summer.


Ingredients

  • 2 ripe mangoes, diced
  • 1 large cucumber, diced
  • 1 cup fresh blueberries
  • 1 ripe avocado, diced
  • Juice of 1 lime
  • Salt and pepper to taste
  • Fresh mint leaves (optional)

Instructions

  1. Prepare the fruit and vegetables. Peel and dice the mangoes into bite-sized cubes. Dice the cucumber into similar-size pieces. Rinse and drain the blueberries. Halve, pit, and dice the avocado.
  2. Combine the prepared ingredients in a large mixing bowl: mango, cucumber, blueberries, and avocado.
  3. Drizzle the juice of one lime evenly over the salad. Season with a pinch or two of salt and a few grinds of black pepper; toss gently to combine.
  4. Taste and adjust seasoning. Add more lime, a touch more salt, or a small drizzle of honey if the mangoes aren’t quite sweet enough.
  5. Garnish with fresh mint leaves if desired. Serve immediately and enjoy!

Notes

Chill ingredients for an extra cool salad. Keep a paper towel nearby to wipe your knife between cuts to prevent stickiness.
