Ingredients

- 2 cups cheddar or Colby-Jack cheese, cut into ½-inch cubes
- 1 cup hard salami, sliced into bite-sized rounds
- 1 cup green olives (pitted)
- ½ cup small pickles or cornichons, sliced (optional)
- ½ cup olive oil
- 2 tbsp red wine vinegar
- 1 tbsp chopped fresh parsley
- 1 tsp Italian seasoning
- ½ tsp red chili flakes
- 2 garlic cloves, minced
- Salt & pepper to taste
Instructions
- In a medium bowl, whisk together olive oil, vinegar, parsley, garlic, chili flakes, and Italian seasoning.
- Add salt and pepper to taste and stir well.
- In a large bowl, combine cheese cubes, salami, olives, and pickle slices.
- Pour the marinade over the mix and toss gently to coat everything.
- Transfer into a large glass jar, packing firmly but not crushing the ingredients.
- Seal and refrigerate for at least 4 hours, preferably overnight.
- Flip or gently shake the jar halfway through marinating.
- Serve chilled or at room temp with toothpicks or small forks.

- These bites are best served chilled or at room temperature.
- Can be made a day in advance for better flavor.
