Description

Zesty and juicy bites of marinated cheese and salami, perfect for appetizers.


Ingredients

Scale
  • 2 cups cheddar or Colby-Jack cheese, cut into ½-inch cubes
  • 1 cup hard salami, sliced into bite-sized rounds
  • 1 cup green olives (pitted)
  • ½ cup small pickles or cornichons, sliced (optional)
  • ½ cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp chopped fresh parsley
  • 1 tsp Italian seasoning
  • ½ tsp red chili flakes
  • 2 garlic cloves, minced
  • Salt & pepper to taste

Instructions

  1. In a medium bowl, whisk together olive oil, vinegar, parsley, garlic, chili flakes, and Italian seasoning.
  2. Add salt and pepper to taste and stir well.
  3. In a large bowl, combine cheese cubes, salami, olives, and pickle slices.
  4. Pour the marinade over the mix and toss gently to coat everything.
  5. Transfer into a large glass jar, packing firmly but not crushing the ingredients.
  6. Seal and refrigerate for at least 4 hours, preferably overnight.
  7. Flip or gently shake the jar halfway through marinating.
  8. Serve chilled or at room temp with toothpicks or small forks.
