Juicy and golden Mediterranean Chicken Patties infused with flavors of feta and olives.

- 1 pound ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup crumbled feta cheese
- 1/4 cup finely chopped Kalamata olives
- 1/4 cup freshly chopped parsley
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg, beaten
- 2 tablespoons olive oil (for cooking)
Instructions
- In a large mixing bowl, combine the ground chicken, breadcrumbs, crumbled feta, chopped Kalamata olives, parsley, minced garlic, dried oregano, paprika, salt, pepper, and beaten egg.
- Using clean hands or a sturdy spoon, mix until everything is evenly distributed and the mixture feels cohesive, but do not overwork it.
- Divide the mixture into 8–10 equal portions. With lightly oiled hands, shape each portion into a compact patty about 2–3 inches in diameter and roughly 1/2–3/4 inch thick.
- Heat the olive oil in a large skillet over medium heat. Once hot, add the patties in a single layer without overcrowding (cook in batches if needed).
- Cook each patty for about 5–6 minutes per side, or until deeply golden brown on the outside and the internal temperature reaches 165°F (74°C).
- Transfer the cooked patties to a paper towel–lined plate to absorb any excess oil while you finish the remaining batch.
- Serve the patties warm with tzatziki sauce, a crisp Mediterranean salad, or your favorite sides.
Notes
- Do not overwork the chicken mixture to keep the patties tender.
- Store leftover patties in an airtight container in the refrigerator for up to 3 days.
- These patties can also be frozen for later use.
