Description

Juicy and golden Mediterranean Chicken Patties infused with flavors of feta and olives.


Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup crumbled feta cheese
  • 1/4 cup finely chopped Kalamata olives
  • 1/4 cup freshly chopped parsley
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten
  • 2 tablespoons olive oil (for cooking)

Instructions

  1. In a large mixing bowl, combine the ground chicken, breadcrumbs, crumbled feta, chopped Kalamata olives, parsley, minced garlic, dried oregano, paprika, salt, pepper, and beaten egg.
  2. Using clean hands or a sturdy spoon, mix until everything is evenly distributed and the mixture feels cohesive, but do not overwork it.
  3. Divide the mixture into 8–10 equal portions. With lightly oiled hands, shape each portion into a compact patty about 2–3 inches in diameter and roughly 1/2–3/4 inch thick.
  4. Heat the olive oil in a large skillet over medium heat. Once hot, add the patties in a single layer without overcrowding (cook in batches if needed).
  5. Cook each patty for about 5–6 minutes per side, or until deeply golden brown on the outside and the internal temperature reaches 165°F (74°C).
  6. Transfer the cooked patties to a paper towel–lined plate to absorb any excess oil while you finish the remaining batch.
  7. Serve the patties warm with tzatziki sauce, a crisp Mediterranean salad, or your favorite sides.

Notes

  • Do not overwork the chicken mixture to keep the patties tender.
  • Store leftover patties in an airtight container in the refrigerator for up to 3 days.
  • These patties can also be frozen for later use.
