- 1 cup barbecue sauce
- 1 cup shredded cheese (sharp cheddar or Monterey Jack)
- 6 slices cooked bacon, crumbled
- ½ cup diced tomatoes
- ¼ cup sliced green onions
- Salt and pepper, to taste
- 1 tablespoon olive oil
Instructions
- Preheat your grill or oven to 350°F (175°C).
- Season the chicken breasts generously with salt and pepper on both sides.
- Heat olive oil in a skillet over medium heat and add the chicken breasts, cooking until golden brown (about 6-7 minutes on each side).
- Brush a generous layer of barbecue sauce over each chicken breast during the last few minutes of cooking.
- Sprinkle shredded cheese and crumbled bacon over the chicken, then cover to allow the cheese to melt (about 2-3 minutes).
- Remove from heat and top with diced tomatoes and green onions before serving.
Notes
Allow chicken to rest for 15 minutes room temperature before cooking for even cooking. Use a meat thermometer to check for doneness.
