Ingredients

  • 4 boneless skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1½ teaspoons dried basil (or ¼ cup chopped fresh basil)
  • 2 cloves garlic, minced
  • 1 tablespoon butter

Instructions

  1. Start by patting the chicken breasts dry with paper towels, then season both sides with garlic powder, onion powder, salt, and pepper. In a skillet over medium heat, heat olive oil and sear the chicken for about 5–6 minutes per side. Set aside.
  2. In the same skillet, reduce the heat, add butter, and then toss in the minced garlic. Stir for about a minute until fragrant.
  3. Pour in the chicken broth and bring to a gentle simmer, scraping up any golden bits. Stir in the heavy cream, and then add Parmesan and mozzarella cheeses until melted. Incorporate the basil.
  4. Nestle the seared chicken back into the skillet, coating with the sauce. Let simmer on low for about 10–12 minutes, or until chicken is cooked through and sauce thickens slightly.
  5. Serve the chicken hot with basil cream sauce over it, ideally with angel hair pasta or mashed potatoes.
