Ingredients

  • ½ cup sugar (for filling)
  • 1 cup heavy whipping cream
  • 2 tsp vanilla extract
  • ¾ cup fresh pineapple chunks
  • ½ cup fresh orange juice
  • 2 tbsp sugar (for puree)

Instructions

  1. Prepare the crust: In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press this mixture firmly into the bottom of your springform pan and chill.
  2. Make the cream cheese filling: Beat cream cheese with an electric mixer until fluffy, then gradually add in sugar and vanilla extract until fully combined.
  3. Whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  4. Prepare the fruit puree in a blender with fresh pineapple chunks, orange juice, and sugar.
  5. Swirl one-third of the cheesecake mixture into the fruit puree, then fold this mixture into the remaining cheesecake filling.
  6. Assemble the cheesecake by pouring the mixture over the chilled crust, smoothing the top and creating swirls.
  7. Refrigerate for at least 4 hours or until set before serving.
