- ¾ cup fresh pineapple chunks
- ½ cup fresh orange juice
- 2 tbsp sugar (for puree)
Instructions
- Prepare the crust: In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press this mixture firmly into the bottom of your springform pan and chill.
- Make the cream cheese filling: Beat cream cheese with an electric mixer until fluffy, then gradually add in sugar and vanilla extract until fully combined.
- Whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
- Prepare the fruit puree in a blender with fresh pineapple chunks, orange juice, and sugar.
- Swirl one-third of the cheesecake mixture into the fruit puree, then fold this mixture into the remaining cheesecake filling.
- Assemble the cheesecake by pouring the mixture over the chilled crust, smoothing the top and creating swirls.
- Refrigerate for at least 4 hours or until set before serving.
