Instructions
- Prepare the Crust: In a medium mixing bowl, combine graham cracker crumbs with sugar. Drizzle in melted butter and stir until the mixture resembles wet sand. Divide evenly among jars and press down firmly.
- Make the Cheesecake Filling: In a separate bowl, beat softened cream cheese, powdered sugar, and vanilla extract with an electric mixer until smooth, about 2–3 minutes.
- Assemble the Layers: Evenly distribute the cream cheese filling over the crusts in each jar, smoothing tops with a spatula. Chill jars in the refrigerator for at least 30 minutes.
- Add the Strawberries: Arrange sliced strawberries on top of the cheesecake layer in each jar, pressing lightly to embed.
- Chill Before Serving: Allow jars to chill in the fridge for at least 1 hour or up to overnight. Garnish with additional strawberries if desired.
