A delicious and easy recipe for No-Bake Turtle Pecan Clusters that combines the rich flavors of chocolate, caramel, and pecans.

- 2 cups pecan halves (or a mix of chopped + halves)
- 1 cup light brown sugar
- ½ cup unsalted butter
- ½ cup heavy cream
- 1 teaspoon vanilla extract
- Pinch of salt
- 2 cups milk chocolate chips
- 1 teaspoon coconut oil
- Whole pecan halves (for topping)
Instructions
- Line a baking sheet with parchment paper or a silicone mat.
- Finely chop most of the pecans, reserving whole halves for topping.
- In a saucepan over medium heat, melt the butter, brown sugar, and heavy cream. Bring to a gentle boil and cook for 3 minutes, stirring constantly. Remove from heat and stir in vanilla, salt, and chopped pecans.
- Spoon rounded portions of the caramel-pecan mixture onto the baking sheet. Let them rest until slightly tacky.
- Melt the milk chocolate chips and coconut oil in the microwave in 20-second intervals, stirring until smooth and silky.
- Spoon a generous layer of melted chocolate over each cluster, then gently press one whole pecan on top.
- Allow the clusters to set at room temperature or refrigerate briefly until firm.
Notes
- For best results, ensure the butter is unsalted.
- You can use dark chocolate chips as an alternative for a richer taste.
- Store clusters in an airtight container for up to a week.
