Description

A delicious and easy recipe for No-Bake Turtle Pecan Clusters that combines the rich flavors of chocolate, caramel, and pecans.


Ingredients

  • 2 cups pecan halves (or a mix of chopped + halves)
  • 1 cup light brown sugar
  • ½ cup unsalted butter
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 2 cups milk chocolate chips
  • 1 teaspoon coconut oil
  • Whole pecan halves (for topping)

Instructions

  1. Line a baking sheet with parchment paper or a silicone mat.
  2. Finely chop most of the pecans, reserving whole halves for topping.
  3. In a saucepan over medium heat, melt the butter, brown sugar, and heavy cream. Bring to a gentle boil and cook for 3 minutes, stirring constantly. Remove from heat and stir in vanilla, salt, and chopped pecans.
  4. Spoon rounded portions of the caramel-pecan mixture onto the baking sheet. Let them rest until slightly tacky.
  5. Melt the milk chocolate chips and coconut oil in the microwave in 20-second intervals, stirring until smooth and silky.
  6. Spoon a generous layer of melted chocolate over each cluster, then gently press one whole pecan on top.
  7. Allow the clusters to set at room temperature or refrigerate briefly until firm.
