- 1 medium zucchini, grated (about 1 cup)
- 1 ½ cups rolled oats
- ½ cup almond butter (or nut butter of choice)
- ¼ cup honey or maple syrup
- ½ teaspoon vanilla extract
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- ½ cup dark chocolate chips (or dried fruits for a healthier option)
- ¼ cup chopped nuts (such as almonds or walnuts, optional)
Instructions
- Grate the zucchini using a box grater and squeeze out excess moisture using a clean kitchen towel.
- In a large mixing bowl, combine the rolled oats, cinnamon, and salt, stirring until well mixed. Add chopped nuts if using.
- In another bowl, mix the almond butter, honey (or maple syrup), and vanilla extract until smooth.
- Add the grated zucchini to the wet mixture and stir until the zucchini is evenly coated, then pour it into the dry ingredients and mix until fully combined.
- Gently fold in the dark chocolate chips (or dried fruits).
- Line an 8×8 inch baking dish with parchment paper, then transfer and press the mixture into the dish to create an even layer.
- Chill in the refrigerator for at least 1 hour to set.
- Once chilled, remove from the pan and cut into bars or squares. Store leftovers in an airtight container in the refrigerator.

- Make sure to squeeze out as much moisture from the zucchini as possible to avoid sogginess.
