- 100 g rolled oats
- 100 g spelt flour
- 50 g almond flour
- 15 g flaxseeds
- 1 packet baking powder
- 1 egg
- 250 g low-fat quark
- 1 teaspoon salt
Instructions
- Preheat the oven to 180°C (350°F) and line a loaf pan with baking paper.
- Mix dry ingredients in a bowl: combine rolled oats, spelt flour, almond flour, flaxseeds, baking powder, and salt.
- Prepare wet ingredients by whisking the egg and quark together until smooth.
- Combine the wet mixture with the dry ingredients, stirring until a thick dough forms.
- Transfer the dough into the prepared loaf pan, smoothing the top.
- Bake the bread for about 40–45 minutes until golden brown and a toothpick inserted comes out mostly clean.
- Cool the bread slightly before slicing.

This bread freezes well; slice before freezing for convenience.
