Description

A simple sheet-pan dinner of chicken breasts and mixed vegetables tossed in balsamic vinegar, olive oil, and garlic, then roasted until golden and cooked through.


Ingredients

  • 2 cups mixed vegetables (broccoli, bell peppers, carrots)
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs for garnish (such as thyme or rosemary)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine chicken breasts, mixed vegetables, balsamic vinegar, olive oil, minced garlic, salt, and pepper in a large bowl.
  3. Toss gently until well coated.
  4. Spread the mixture evenly on a baking sheet, avoiding overcrowding.
  5. Bake for 25–30 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  6. Remove from the oven and let rest for 5 minutes before serving.

Notes
