Description

A comforting one pot meal featuring savory sausage, tender rice, and vibrant peppers, all infused with rich flavors and served with fresh parsley.


Ingredients

  • 1 pound sausage (Italian or kielbasa)
  • 1 cup rice (long grain or basmati)
  • 2 cups chicken broth
  • 1 cup bell peppers (diced)
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat a large heavy-bottomed pot or Dutch oven over medium heat. Add 1 tablespoon olive oil and let it shimmer.
  2. Add the diced onion and bell peppers. Sauté for 4–6 minutes, until the onion turns translucent and the peppers soften.
  3. Stir in the minced garlic for about 30 seconds until fragrant. Add the sausage and cook, stirring, for 6–8 minutes until browned.
  4. Add the rice to the pot and stir to coat with the sausage fat and aromatics. Sprinkle in 1 teaspoon paprika, and season with salt and pepper.
  5. Pour in 2 cups chicken broth, stir to combine, and bring to a gentle boil. Reduce heat to low, cover tightly, and simmer for 20–25 minutes.
  6. Remove from heat and leave covered for 5 minutes to let the rice steam.
  7. Fluff the rice gently with a fork and adjust seasoning if needed. Sprinkle chopped fresh parsley over the top and serve.

Notes

For a richer finish, substitute olive oil with avocado oil or butter. Add a touch of smoked paprika for extra depth.
