- 2 tablespoons melted butter
- 1 large egg
- 1 teaspoon vanilla extract
- 1¼ cups milk
- 2 cups pancake mix
- 1 pound breakfast sausage (chicken, pork, or turkey)
- ½ teaspoon ground cinnamon (optional)
- 1 tablespoon maple syrup (optional)
- 1 cup shredded cheddar cheese (optional)
- More butter or cooking spray for baking dish
Instructions
- Preheat your oven to 190°C (375°F). Grease a 23×33 cm baking dish with butter or cooking spray.
- Cook the breakfast sausage in a skillet over medium heat until browned, then drain the fat and set aside.
- In a large bowl, mix together pancake mix, milk, egg, melted butter, vanilla extract, and, if desired, maple syrup and ground cinnamon. Stir until just combined.
- Pour half of the pancake batter into the greased baking dish.
- Evenly sprinkle the cooked sausage over the batter.
- Pour the remaining pancake batter over the sausage layer.
- If using, sprinkle cheddar cheese on top of the batter.
- Bake in the preheated oven for about 25 to 30 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
- Once baked, let the casserole sit for five minutes before slicing and serving.

- For a sweeter flavor, consider adding maple syrup and cinnamon to the batter.
