Ingredients

Scale
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 4 (8 oz) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 4 cups fresh peaches, peeled and sliced
  • 1 teaspoon cinnamon
  • 1/4 cup brown sugar

Instructions

  2. Combine the graham cracker crumbs, melted butter, and 1/4 cup sugar in a mixing bowl.
  3. Press the mixture into the bottom of the prepared pan.
  4. Beat the cream cheese with the remaining sugar and vanilla extract until creamy.
  5. Incorporate the eggs one at a time, blending after each addition.
  6. Pour the cheesecake mixture over the crust.
  7. Mix sliced peaches with cinnamon and brown sugar, then layer them over the cheesecake.
  8. Bake for 50-60 minutes until the center is just set.

Notes

For best results, use room temperature ingredients and avoid overmixing the batter to prevent cracks in the cheesecake.
