Instructions
- Prepare the Filling: In a medium saucepan over medium heat, combine the diced peaches, granulated sugar, brown sugar, cinnamon, nutmeg, cornstarch, lemon juice, and vanilla extract. Stir continuously as it bubbles, cooking for about 5-7 minutes until thickened.
- Cool the Filling: Remove from heat and allow to cool slightly.
- Wrap the Egg Rolls: Lay an egg roll wrapper in a diamond shape, place 2 tablespoons of peach filling in the center, fold up the bottom corner, fold in the sides, and roll tightly. Seal with water.
- Heat the Oil: In a deep skillet, heat about 2 inches of vegetable oil to 350°F (175°C).
- Fry the Egg Rolls: Fry in batches until golden brown and crispy, about 2-3 minutes per side. Transfer to a paper towel-lined plate.
- Finish and Serve: Dust with powdered sugar if desired, and serve immediately with vanilla ice cream.
Notes
Use ripe peaches for the best flavor. Consider an air fryer for a lighter version, or customize with nuts for added crunch.
