Description

Delightful bars featuring a buttery crust, juicy peach filling, and a crumbly topping, perfect for summer.


Ingredients

  • 1 cup (125g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup (115g) unsalted butter, melted
  • 1/4 teaspoon ground cinnamon
  • 2 cups fresh peach slices, peeled and diced
  • 2 tablespoons granulated sugar
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • A pinch of nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper.
  2. In a medium bowl, combine flour, sugar, salt, and cinnamon, then stir in melted butter to form coarse crumbs.
  3. Reserve 3/4 cup of crumb mixture for topping and set aside.
  4. Press the remaining mixture into the bottom of the prepared pan and bake for 10 minutes.
  5. Toss peach slices with sugar, flour, vanilla, cinnamon, and nutmeg until evenly coated.
  6. Spread the peach mixture over the pre-baked crust.
  7. Sprinkle the reserved crumb mixture evenly over the peach layer.
  8. Bake for 30–35 minutes, until golden brown and bubbly at the edges.
  9. Allow to cool completely in the pan on a wire rack before cutting into squares.

Notes

Serve warm with vanilla ice cream for a delightful dessert. Can be made ahead and refrigerated before baking.
