Description

Golden, glossy, crunchy, and perfectly chewy — these old-fashioned peanut butter cornflake cookies are a nostalgic favorite that comes together in minutes and sets beautifully every time!

Ingredients

Scale
  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 cup creamy peanut butter
  • 4½ cups cornflakes cereal
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • Optional: festive sprinkles or nonpareils

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a saucepan over medium heat, combine sugar and corn syrup. Stir constantly until the mixture comes to a full rolling boil and the sugar is completely dissolved (about 4–5 minutes).
  3. Remove from heat and immediately stir in peanut butter, vanilla, and salt until smooth and glossy.
  4. Gently fold in cornflakes until fully coated, keeping them chunky and intact.
  5. Drop spoonfuls onto the prepared baking sheet. Sprinkle with festive nonpareils before they set, if desired.
  6. Let cookies cool at room temperature for 20–30 minutes until firm.

Notes

  • Ensure to keep cornflakes chunky for the best texture.
  • Feel free to customize with different types of sprinkles.
