Instructions
- Line a baking sheet with parchment paper.
- In a saucepan over medium heat, combine sugar and corn syrup. Stir constantly until the mixture comes to a full rolling boil and the sugar is completely dissolved (about 4–5 minutes).
- Remove from heat and immediately stir in peanut butter, vanilla, and salt until smooth and glossy.
- Gently fold in cornflakes until fully coated, keeping them chunky and intact.
- Drop spoonfuls onto the prepared baking sheet. Sprinkle with festive nonpareils before they set, if desired.
- Let cookies cool at room temperature for 20–30 minutes until firm.
