Ingredients

  • ½ cup finely chopped pecans
  • ½ cup dried cranberries, chopped
  • ½ cup pineapple tidbits, well drained + patted dry
  • 23 tbsp finely chopped fresh parsley
  • ¼ tsp garlic powder
  • ¼ tsp black pepper
  • Pinch of salt, if needed
  • ½ cup pecan halves or large pieces (for topping)
  • ⅓ cup dried cranberries (for topping)
  • ½ cup pineapple tidbits (well drained, for topping)
  • 12 tbsp chopped fresh parsley (for topping)

Instructions

  1. In a medium bowl, beat softened cream cheese until smooth and creamy.
  2. Add chopped pecans, dried cranberries, pineapple tidbits, parsley, garlic powder, black pepper, and salt. Gently fold until evenly combined — keep ingredients chunky.
  3. Transfer mixture onto plastic wrap. Shape into a tight, even log, wrap well, and refrigerate at least 2 hours (or overnight) to firm up.
  4. Unwrap and place on a serving platter. Arrange pecan halves, extra cranberries, pineapple tidbits, and parsley on top and slightly down the sides.
