Description

Delightful cake bars with a rich chocolate base topped with fluffy pink coconut, perfect for celebrations.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut
  • 1/4 cup pink food coloring
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate mixing bowl, beat the softened butter and sugar together until fluffy.
  4. Add the eggs one at a time, mixing thoroughly, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Spread the batter into the prepared baking pan evenly.
  7. Bake for 20-25 minutes, or until a toothpick comes out clean.
  8. Let the cake cool completely in the pan.
  9. Mix shredded coconut with pink food coloring.
  10. Make icing by mixing powdered sugar with water or milk until desired consistency.
  11. Spread icing over cooled bars and sprinkle the pink coconut on top.
  12. Slice into bars and serve.

Notes

For added flavor, consider adding crushed nuts or using gluten-free flour. These bars can also be made in an air fryer.
