  • ½ cup coarsely chopped pistachios
  • ½ cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup whole milk
  • 2 cups powdered sugar (for frosting)
  • ½ cup butter (softened for frosting)
  • ½ cup pistachio paste

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your cupcake tin with colorful liners.
  2. Whisk together the flour, baking powder, salt, and chopped pistachios in a medium bowl.
  3. Beat the softened butter and granulated sugar in a large bowl until light and fluffy.
  4. Add the eggs one at a time, mixing on low speed after each addition.
  5. Stir in vanilla extract to enrich the batter.
  6. Gradually add the dry mixture to the wet mixture, alternating with the milk, until just combined.
  7. Fill each cupcake liner about two-thirds full with batter.
  8. Bake for 18-20 minutes or until golden and a toothpick comes out clean.
