Description

Quick Yeast Cinnamon Rolls are creamy, warm, and irresistibly gooey, perfect for any occasion or as a delightful treat.


Ingredients

  • 3 1/2 cups all-purpose flour (440g) + additional flour as needed
  • 2 1/4 tsp (1 packet) instant dry yeast (7g)
  • 1 tsp fine salt (6g)
  • 1 cup whole milk (240g)
  • 1/2 cup granulated sugar (100g)
  • 1/4 cup unsalted butter, room temperature (56g)
  • 1 large egg, room temperature (56g)
  • 4 Tbsp (1/2 stick) unsalted butter, very soft (56g)
  • 1/2 cup packed light brown sugar (100g)
  • 1 Tbsp ground cinnamon
  • 1/2 tsp fine salt
  • 1/4 cup full fat cream cheese, room temperature (56g)
  • 1/4 cup unsalted butter, room temperature (56g)
  • 2 tsp vanilla extract or vanilla bean paste (8g)
  • 1/4 tsp fine salt
  • 1 1/2 cups powdered sugar (190g)
  • 2 Tbsp heavy whipping cream, room temperature (30g)

Instructions

  1. Preheat your oven to 200 F / 95 C (if making the day before, skip preheating).
  2. In a large bowl, mix 3 1/2 cups flour, 2 1/4 tsp yeast, and 1 tsp salt.
  3. Warm the milk, sugar, and butter in the microwave for 1 minute, then combine.
  4. Pour the warm milk mixture into the dry ingredients and mix until a sticky dough forms.
  5. Add 1 large egg and continue mixing until the dough is elastic.
  6. Add additional flour 1 Tbsp at a time until dough leaves the sides of the bowl.
  7. Poke the dough to check readiness – it should be tacky but not sticky.
  8. Cover the bowl with plastic wrap and let the dough rest for 10-20 minutes.
  9. In another bowl, mix the filling: 4 Tbsp butter, 1/2 cup brown sugar, 1 Tbsp cinnamon, and 1/2 tsp salt until combined.
  10. Line an 8×8-inch pan with parchment paper.
  11. Roll the dough out to a rectangle (18×12 inches, 1/2 cm thick).
  12. Spread the filling evenly across the dough.
  13. Roll the dough and cut into 9 equal pieces or cut and roll individually.
  14. Proof rolls in the fridge overnight if prepared ahead of time.
  15. The next morning, take the rolls out, preheat the oven, and bake as directed.

Notes

  • Ensure butter is very soft for filling consistency.
  • For cutting and rolling, you can use either method described.
  • Check dough doneness by poking; it should not stick to fingers.
