Ingredients

  • 1 tbsp sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup buttermilk (or milk + 1 tsp lemon)
  • 1 egg
  • 2 tbsp melted butter
  • 1 tsp vanilla
  • 6 large pancakes
  • 4 small pancakes (ears and eyes base)
  • 2 blueberries (eyes)
  • 2 banana slices (eye whites)
  • 2 red candies or cranberries (nose — Rudolph style)
  • Fresh cranberries (around plate)
  • Melted chocolate (for antlers)
  • Powdered sugar (snowy effect)

Instructions

  1. In a bowl, mix the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together the buttermilk, egg, vanilla, and melted butter.
  3. Combine the wet and dry mixtures gently, being careful not to overmix. Let the batter rest for 5 minutes.
  4. Heat a non-stick pan over medium heat and pour the batter to form large pancakes for the face and small pancakes for the ears and under eyes. Cook for 1-2 minutes per side until golden.
  5. Melt the chocolate and pipe or drizzle antler shapes onto parchment paper. Freeze for 5-10 minutes until solid.
  6. Stack 2-3 large pancakes to create the face. Add 2 small pancakes on either side as ears. Place the banana slices and blueberries for the eyes, and a red candy or cranberry as the nose. Insert the chocolate antlers on top, arrange cranberries around the plate, and dust lightly with powdered sugar for a snowy finish.
