Description

Deliciously fluffy muffins combining the brightness of citrus with the sweet creaminess of banana and ricotta.


Ingredients

  • 2 large ripe bananas, mashed
  • 1 cup ricotta cheese
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • Zest of 1 lemon
  • 2 tablespoons fresh orange juice
  • 2 tablespoons fresh lemon juice
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons turbinado sugar, for sprinkling (optional)

Instructions

  1. Preheat the oven to 350°F and prepare the muffin tin by lining it with paper liners or spraying it with nonstick spray.
  2. Whisk together the mashed bananas, ricotta, eggs, vegetable oil, milk, and vanilla extract until smooth.
  3. Stir in the orange zest, lemon zest, fresh orange juice, and fresh lemon juice.
  4. Whisk together the flour, sugar, baking powder, baking soda, and salt in a separate bowl.
  5. Fold the dry ingredients into the wet ingredients gently until just incorporated.
  6. Spoon the batter into the muffin cups, filling them about three-quarters full.
  7. Sprinkle turbinado sugar on top of the muffins if desired.
  8. Bake for 22 to 25 minutes until a toothpick comes out clean.
  9. Cool in the pan for 5 minutes before transferring to a wire rack.

Notes

Use very ripe bananas for the best flavor and texture. Overmixing can lead to tough muffins.
