Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, combine the ricotta cheese, sugar, orange juice, orange zest, eggs, vegetable oil, and vanilla extract. Mix until smooth.
- In another bowl, whisk together the flour, baking powder, and salt until there are no lumps.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Fold in the cranberries with a spatula, ensuring even distribution.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
