Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the ricotta cheese, sugar, orange juice, orange zest, eggs, vegetable oil, and vanilla extract. Mix until smooth.
  3. In another bowl, whisk together the flour, baking powder, and salt until there are no lumps.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Fold in the cranberries with a spatula, ensuring even distribution.
  6. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
