- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 cup heavy cream
- 2 cups strawberries, hulled and sliced
- 2 tablespoons sugar (for strawberries)
- Whipped cream for topping
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the flour, 1/4 cup sugar, baking powder, and salt.
- Cut in the cold butter using a pastry cutter until the mixture resembles coarse crumbs.
- Gently stir in the heavy cream until just combined.
- Turn the dough onto a floured surface and knead lightly a couple of times.
- Roll out the dough to about 1-inch thick and use a round cutter to create uniform shortcakes.
- Place them on your baking sheet and bake for 15-20 minutes until golden brown.
- Meanwhile, toss the strawberries with 2 tablespoons of sugar and let them sit for about 10 minutes.
- Once the shortcakes are baked, let them cool slightly on a wire rack.
- Carefully split the shortcakes in half, layer with the sweetened strawberries, and finish with whipped cream. Serve immediately.
