- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1/2 cup chocolate chips
- 1 cup mini marshmallows
- Graham cracker crumbs for topping
Instructions
- Whisk the dry ingredients. In a large bowl, combine flour, sugar, baking powder, and salt until evenly mixed.
- Mix the wet ingredients. In a separate bowl, whisk together milk, egg, and melted butter until smooth.
- Combine gently the wet mixture into the dry ingredients and stir until just combined.
- Fold in chocolate chips and mini marshmallows without breaking the batter too much.
- Heat a griddle over medium heat and lightly grease it with butter or oil.
- Cook pancakes, pouring about 1/4 cup of batter for each. Cook until bubbles form, then flip and cook until golden brown.
- Plate and finish warm pancakes with additional chocolate, toasted marshmallows, and graham cracker crumbs.
Notes
Make-ahead: Mix dry ingredients the night before for quick batter in the morning. Store leftovers in the fridge for up to 3 days.
