Delicious and festive Santa Hat Cheesecake Bites, perfect for holiday celebrations.
Ingredients

- 1 cup graham cracker crumbs (about 8 full sheets)
- 2 tablespoons granulated sugar
- 4 tablespoons unsalted butter, melted
- 2 (8 oz) blocks cream cheese, room temperature
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs, room temperature
- 1/4 cup sour cream
- 1 tablespoon all-purpose flour
- Pinch of salt
- 12–14 fresh strawberries, hulled
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 325°F (163°C). Line a mini cheesecake pan or mini muffin tin with paper liners or use a silicone mold. Lightly grease the cavities if not using liners.
- In a small bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand. Spoon about 1 tablespoon into each cavity and press down firmly using the back of a spoon or small glass. Bake for 5 minutes, then remove and set aside to cool slightly.
- In a large mixing bowl, beat the softened cream cheese until completely smooth. Add granulated sugar and mix until fully combined. Add eggs one at a time, beating gently and scraping the bowl as needed. Mix in vanilla extract, sour cream, flour, and a pinch of salt just until incorporated. Do not overmix.
- Evenly divide the filling among the crusts, filling each cavity nearly to the top. Bake for 15–18 minutes, or until the centers are set but still have a slight jiggle. Remove from the oven and cool in the pan for 10 minutes. Transfer to a wire rack to cool completely, then refrigerate for at least 2 hours or overnight.
- In a chilled bowl, beat heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form. Transfer to a piping bag fitted with a star or round tip.
- Pipe a swirl of whipped cream on top of each chilled cheesecake. Place a hulled strawberry on top, pointed side up. Add a small dot of whipped cream to the tip of each strawberry to finish the Santa hat look.
Notes
- For the best flavor, use room temperature cream cheese.
- These cheesecake bites can be made a day in advance.
