Description

Delicious and festive Santa Hat Cheesecake Bites, perfect for holiday celebrations.


Ingredients

  • 1 cup graham cracker crumbs (about 8 full sheets)
  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, melted
  • 2 (8 oz) blocks cream cheese, room temperature
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs, room temperature
  • 1/4 cup sour cream
  • 1 tablespoon all-purpose flour
  • Pinch of salt
  • 1214 fresh strawberries, hulled
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (163°C). Line a mini cheesecake pan or mini muffin tin with paper liners or use a silicone mold. Lightly grease the cavities if not using liners.
  2. In a small bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand. Spoon about 1 tablespoon into each cavity and press down firmly using the back of a spoon or small glass. Bake for 5 minutes, then remove and set aside to cool slightly.
  3. In a large mixing bowl, beat the softened cream cheese until completely smooth. Add granulated sugar and mix until fully combined. Add eggs one at a time, beating gently and scraping the bowl as needed. Mix in vanilla extract, sour cream, flour, and a pinch of salt just until incorporated. Do not overmix.
  4. Evenly divide the filling among the crusts, filling each cavity nearly to the top. Bake for 15–18 minutes, or until the centers are set but still have a slight jiggle. Remove from the oven and cool in the pan for 10 minutes. Transfer to a wire rack to cool completely, then refrigerate for at least 2 hours or overnight.
  5. In a chilled bowl, beat heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form. Transfer to a piping bag fitted with a star or round tip.
  6. Pipe a swirl of whipped cream on top of each chilled cheesecake. Place a hulled strawberry on top, pointed side up. Add a small dot of whipped cream to the tip of each strawberry to finish the Santa hat look.
