Description

Savory Sweet Potato Hash Browns are a delicious breakfast option that combines the natural sweetness of sweet potatoes with savory flavors, resulting in crispy and flavorful patties.

Ingredients

Scale
  • 1 large sweet potato, peeled (approx. 3½ cups)
  • 2 tablespoons grated onion
  • 2 eggs
  • 1 tablespoon plain flour
  • 1/4 teaspoon kosher salt (adjust to taste)
  • 2 tablespoons vegetable oil (use more if required)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Coarsely grate the sweet potato and soak it in a bowl of cold water, then drain and squeeze out excess moisture.
  3. In a medium bowl, combine the grated sweet potato, grated onion, eggs, flour, and salt, mixing well to form a batter.
  4. Heat oil in a large skillet over medium heat and scoop heaping tablespoons of the potato mixture onto the hot oil, flattening them to form patties.
  5. Cook the patties for 3-4 minutes on one side until lightly browned, then flip and cook for an additional 3-4 minutes.
  6. Once done, place them on a baking sheet and bake in the preheated oven for 10-12 minutes until cooked through and crispy.
  7. Serve hot with a dollop of sour cream and enjoy!

Notes

  • Adjust the seasoning to taste.
  • Ensure the sweet potato is well-squeezed to avoid sogginess.
  • These hash browns can be served with various toppings such as sour cream or chives.
