Description

Ingredients

  • 24 chocolate sandwich cookies, finely crushed
  • 5 tablespoons unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 teaspoon mint extract
  • A few drops of green food coloring
  • 8 ounces whipped topping, thawed
  • 1/2 cup mini chocolate chips
  • Chocolate syrup, for garnish (optional)

Instructions

  1. Prepare the crust by crushing the chocolate sandwich cookies into fine crumbs.
  2. Combine the cookie crumbs with melted butter until coated.
  3. Form the crust in a 9-inch pie dish and refrigerate for 20 minutes.
  4. Make the mint filling by beating softened cream cheese until smooth.
  5. Add sugar and mint extract, then mix in a few drops of green food coloring.
  6. Fold in the whipped topping gently with a spatula.
  7. Add mini chocolate chips and distribute evenly.
  8. Fill the crust with the mint mixture and smooth the top.
  9. Freeze the pie for at least 4 hours to set.
  10. Serve after letting it sit at room temperature for 10 minutes.
