- 24 chocolate sandwich cookies, finely crushed
- 5 tablespoons unsalted butter, melted
- 8 ounces cream cheese, softened
- 3/4 cup granulated sugar
- 1 teaspoon mint extract
- A few drops of green food coloring
- 8 ounces whipped topping, thawed
- 1/2 cup mini chocolate chips
- Chocolate syrup, for garnish (optional)
Instructions
- Prepare the crust by crushing the chocolate sandwich cookies into fine crumbs.
- Combine the cookie crumbs with melted butter until coated.
- Form the crust in a 9-inch pie dish and refrigerate for 20 minutes.
- Make the mint filling by beating softened cream cheese until smooth.
- Add sugar and mint extract, then mix in a few drops of green food coloring.
- Fold in the whipped topping gently with a spatula.
- Add mini chocolate chips and distribute evenly.
- Fill the crust with the mint mixture and smooth the top.
- Freeze the pie for at least 4 hours to set.
- Serve after letting it sit at room temperature for 10 minutes.
Notes
This pie can be made a day in advance and stored in the freezer for up to a week. It can also be served immediately as a chilled pie.
