Ingredients

  • 1 pound kielbasa, sliced into 1/2-inch pieces
  • 1 cup bell pepper, sliced (any color)
  • 1 cup broccoli florets
  • 1 cup baby carrots, halved
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Cooking spray or parchment paper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare a large sheet pan by lining it with parchment paper or lightly spraying it with cooking spray.
  3. In a large mixing bowl, combine sliced kielbasa, bell pepper, broccoli, and baby carrots. Drizzle with olive oil and season with salt and pepper, tossing everything until evenly coated.
  4. Spread the kielbasa and vegetables evenly on the prepared sheet pan.
  5. In a separate bowl, whisk together honey, soy sauce, and minced garlic until smooth.
  6. Pour the honey-garlic mixture evenly over the kielbasa and vegetables on the sheet pan, ensuring everything is well-coated.
  7. Place the sheet pan in the preheated oven and bake for 20-25 minutes or until vegetables are tender and kielbasa is cooked through.
  8. Halfway through cooking, stir the kielbasa and vegetables to ensure even cooking and coating of sauce.
  9. Once cooked, remove from the oven and let cool slightly before serving. Adjust seasoning with additional salt and pepper if needed.
