- 1 pound kielbasa, sliced into 1/2-inch pieces
- 1 cup bell pepper, sliced (any color)
- 1 cup broccoli florets
- 1 cup baby carrots, halved
- 1/2 cup honey
- 1/4 cup soy sauce
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Cooking spray or parchment paper
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare a large sheet pan by lining it with parchment paper or lightly spraying it with cooking spray.
- In a large mixing bowl, combine sliced kielbasa, bell pepper, broccoli, and baby carrots. Drizzle with olive oil and season with salt and pepper, tossing everything until evenly coated.
- Spread the kielbasa and vegetables evenly on the prepared sheet pan.
- In a separate bowl, whisk together honey, soy sauce, and minced garlic until smooth.
- Pour the honey-garlic mixture evenly over the kielbasa and vegetables on the sheet pan, ensuring everything is well-coated.
- Place the sheet pan in the preheated oven and bake for 20-25 minutes or until vegetables are tender and kielbasa is cooked through.
- Halfway through cooking, stir the kielbasa and vegetables to ensure even cooking and coating of sauce.
- Once cooked, remove from the oven and let cool slightly before serving. Adjust seasoning with additional salt and pepper if needed.
