Description

A quick, healthy stir fry you can make in under 20 minutes using simple ingredients.


Ingredients

  • 2 chicken breasts, sliced
  • 2 medium zucchinis, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: red pepper flakes for heat
  • Optional: cooked rice or noodles for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sliced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add minced garlic and sliced zucchini to the skillet.
  4. Stir-fry for another 3-4 minutes until the zucchini is tender.
  5. Pour soy sauce over the mixture and stir to combine.
  6. Season with salt, pepper, and red pepper flakes if using.
  7. Serve immediately over rice or noodles if desired.

Notes

Slice chicken and zucchini to similar thickness for even cooking. Use high heat to keep zucchini from becoming mushy.
