Description

Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 1 can (14 oz) coconut milk
  • 1 cup beef broth
  • 2 tablespoons curry powder
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce (optional)
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. In a slow cooker, combine the beef, coconut milk, beef broth, curry powder, onion, garlic, ginger, soy sauce, and fish sauce.
  2. Season with salt and pepper.
  3. Stir everything to combine.
  4. Cover and cook on low for 6-8 hours or high for 4-5 hours, until the beef is tender.
  5. Taste and adjust seasoning if necessary.
  6. Serve hot, garnished with chopped cilantro.

Notes

Tip: Brown the beef first for more flavor and use full-fat coconut milk for a richer sauce.
