- 2 pounds beef chuck, cut into cubes
- 1 can (14 oz) coconut milk
- 1 cup beef broth
- 2 tablespoons curry powder
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tablespoon ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce (optional)
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- In a slow cooker, combine the beef, coconut milk, beef broth, curry powder, onion, garlic, ginger, soy sauce, and fish sauce.
- Season with salt and pepper.
- Stir everything to combine.
- Cover and cook on low for 6-8 hours or high for 4-5 hours, until the beef is tender.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with chopped cilantro.
Notes
Tip: Brown the beef first for more flavor and use full-fat coconut milk for a richer sauce.
