Description

Ingredients

  • 4 chicken thighs or breasts
  • 2 lemons (juiced and zested)
  • 1 tablespoon olive oil
  • 2 teaspoons dried herbs (like thyme and rosemary)
  • 4 cloves garlic (minced)
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 1 cup long-grain rice
  • 2 cups mixed vegetables (optional)

Instructions

  1. In a bowl, mix lemon juice, lemon zest, olive oil, dried herbs, garlic, salt, and pepper.
  2. Place the chicken in the slow cooker and pour the lemon herb mixture over it.
  3. Add chicken broth and rice to the slow cooker, stirring gently to combine.
  4. If using, add mixed vegetables on top.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and the rice is fluffy.
