- 2 large eggs
- 1 teaspoon vanilla extract

- 1/2 cup mini chocolate chips (optional)

- 1/2 cup marshmallow fluff or mini marshmallows

- 1/4 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and prepare an 8 x 8-inch baking pan by greasing or lining it with parchment paper.
- In a bowl, mix melted butter with granulated sugar. Add eggs and vanilla extract, mixing well.
- Add cocoa powder, flour, salt, and baking powder to the mixture, stirring until smooth. Optionally, fold in mini chocolate chips.
- Pour the brownie batter into the prepared pan, spreading it evenly.
- Bake for 20-25 minutes until a toothpick inserted comes out with a few moist crumbs.
- Let the brownies cool completely in the pan.
- While cooling, prepare the marshmallow topping by heating cream, butter, and vanilla in a saucepan over medium-low heat.
- Stir in marshmallow fluff or mini marshmallows until melted and smooth, then let it cool slightly.
- Spread the marshmallow mixture over the cooled brownies, covering completely.
- Sprinkle shredded coconut on top, pressing gently to adhere.
- Refrigerate for about 30 minutes to set the topping.
- Slice into squares and serve.
Notes
For a richer chocolate flavor, consider adding melted chocolate to the brownie batter. These brownies are best served warm for enhanced fudginess.
