Description

Delightful fudgy brownies topped with a fluffy marshmallow layer and shredded coconut, perfect for any celebration.


Ingredients

  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup mini chocolate chips (optional)
  • 1 cup shredded coconut (sweetened or unsweetened)
  • 1/2 cup marshmallow fluff or mini marshmallows
  • 1/2 cup heavy cream
  • 1 tablespoon butter
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare an 8 x 8-inch baking pan by greasing or lining it with parchment paper.
  2. In a bowl, mix melted butter with granulated sugar. Add eggs and vanilla extract, mixing well.
  3. Add cocoa powder, flour, salt, and baking powder to the mixture, stirring until smooth. Optionally, fold in mini chocolate chips.
  4. Pour the brownie batter into the prepared pan, spreading it evenly.
  5. Bake for 20-25 minutes until a toothpick inserted comes out with a few moist crumbs.
  6. Let the brownies cool completely in the pan.
  7. While cooling, prepare the marshmallow topping by heating cream, butter, and vanilla in a saucepan over medium-low heat.
  8. Stir in marshmallow fluff or mini marshmallows until melted and smooth, then let it cool slightly.
  9. Spread the marshmallow mixture over the cooled brownies, covering completely.
  10. Sprinkle shredded coconut on top, pressing gently to adhere.
  11. Refrigerate for about 30 minutes to set the topping.
  12. Slice into squares and serve.

Notes

For a richer chocolate flavor, consider adding melted chocolate to the brownie batter. These brownies are best served warm for enhanced fudginess.
