Description
A delightful twist on the classic grilled cheese, enriched with sweet caramelized onions and creamy Gruyere cheese, layered in crispy sourdough bread.

- 4 slices sourdough bread
- 5 oz Gruyere cheese, grated or thinly sliced
- 1 large yellow onion, thinly sliced
- 1 tablespoon unsalted butter
- 1 teaspoon olive oil
- 1/4 teaspoon salt
- 1/2 teaspoon sugar
- 2 tablespoons unsalted butter, softened
- Fresh thyme leaves or black pepper to taste
Instructions
- Caramelize the onions: Heat 1 tablespoon of butter and 1 teaspoon of olive oil in a skillet over medium heat. Add the thinly sliced onions and sprinkle with 1/4 teaspoon of salt. Cook, stirring occasionally, for 15-18 minutes until golden brown.
- Prepare the bread: Lay out your 4 sourdough slices. Generously butter one side of each slice with softened butter.
- Build your sandwich: On the unbuttered side of two bread slices, layer half of the grated Gruyere cheese. Top with caramelized onions and sprinkle with fresh thyme or black pepper. Layer the rest of the Gruyere on top and cover with the remaining two bread slices, buttered side facing outward.
- Grill to perfection: Heat a skillet or griddle over medium-low heat. Place sandwiches in the pan and cook for 3-4 minutes on each side until golden brown and cheese melts.
- Slice and serve: Remove from the pan and let rest for one minute. Slice diagonally to reveal the melty cheese and caramelized onions. Serve hot.

Make ahead by preparing caramelized onions in advance. Experiment with different cheeses for varied flavors.
