Description

A comforting dish of spaghetti coated in a creamy Pecorino Romano cheese sauce, punctuated with freshly cracked black pepper.


Ingredients

  • 14 oz Spaghetti
  • 1 cup Pecorino Romano Cheese, finely grated
  • 2 teaspoons Freshly Cracked Black Pepper
  • Salt for Pasta Water

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add spaghetti and cook until al dente, stirring occasionally.
  3. Reserve about 1 cup of the pasta water before draining.
  4. Toast the black pepper in a large skillet over low heat for 1-2 minutes until fragrant.
  5. Pour 1/2 cup of the reserved hot pasta water into the skillet with the black pepper and simmer.
  6. Add the drained spaghetti to the skillet, tossing to combine with the peppery water.
  7. Gradually sprinkle in the Pecorino Romano while tossing until melted and creamy, adjusting with reserved pasta water as needed.
  8. Serve immediately with additional Pecorino and cracked pepper on top.

Notes

Use high-quality spaghetti for best results. Always reserve pasta water to adjust sauce consistency and flavor.
