- 14 oz Spaghetti
- 1 cup Pecorino Romano Cheese, finely grated
- 2 teaspoons Freshly Cracked Black Pepper
- Salt for Pasta Water
Instructions
- Bring a large pot of salted water to a boil.
- Add spaghetti and cook until al dente, stirring occasionally.
- Reserve about 1 cup of the pasta water before draining.
- Toast the black pepper in a large skillet over low heat for 1-2 minutes until fragrant.
- Pour 1/2 cup of the reserved hot pasta water into the skillet with the black pepper and simmer.
- Add the drained spaghetti to the skillet, tossing to combine with the peppery water.
- Gradually sprinkle in the Pecorino Romano while tossing until melted and creamy, adjusting with reserved pasta water as needed.
- Serve immediately with additional Pecorino and cracked pepper on top.
Notes
Use high-quality spaghetti for best results. Always reserve pasta water to adjust sauce consistency and flavor.
