Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup buttermilk
  • 1/2 cup cornstarch
  • 1/2 cup all-purpose flour
  • Vegetable oil, for deep frying
  • 1 tablespoon chopped chives
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon honey

Instructions

  1. Place the shrimp in a bowl and cover with buttermilk. Allow to marinate for 10 to 15 minutes.
  2. In a separate bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey until smooth. Set aside.
  3. In a shallow dish, combine all-purpose flour and cornstarch. Remove shrimp from buttermilk, letting excess liquid drip off, and dredge each piece thoroughly in the flour-cornstarch mixture.
  4. In a deep pan, heat vegetable oil to 350°F. Fry the coated shrimp in batches, 2 to 3 minutes per side, until golden brown and crisp. Transfer fried shrimp to a wire rack to drain.
  5. While the shrimp are still hot, gently toss them in the prepared bang bang sauce.
  6. Arrange shrimp on a serving plate and sprinkle with chopped chives. Serve immediately.
