  • 5 cloves Garlic
  • 1 inch Ginger
  • 2 Green Chilies
  • 1 medium Onion
  • 1 medium Bell Pepper
  • 3 tablespoons Chili Sauce
  • 1 tablespoon Vinegar
  • 1 teaspoon Sugar
  • 1 teaspoon Chili Flakes
  • Water (as necessary)
  • 2 tablespoons Spring Onions

Instructions

  1. Marinate the Chicken: In a mixing bowl, combine the boneless chicken breast, soy sauce, chili powder, ginger garlic paste, salt, pepper, and cornflour. Mix well until each piece is coated. For best results, let it marinate for at least 30 minutes.
  2. Prepare to Fry: In a heavy pot or deep fryer, heat the oil over medium heat. Use a thermometer to ensure your oil reaches about 350°F (175°C).
  3. Coat the Chicken: In a separate bowl, whisk the egg white until frothy, then add the marinated chicken pieces. Ensure each piece is well-coated.
  4. Fry the Chicken: Gently drop the chicken into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 5–7 minutes per batch. Use a slotted spoon to remove and place on paper towels to drain excess oil.
  5. Stir-fry the Aromatics: In a separate pan, heat 2 tablespoons of oil over high heat. Add the minced garlic, ginger, diced onion, and chopped bell pepper. Sauté quickly for a minute, allowing the vegetables to retain some crunch.
  6. Combine Everything: Add the fried chicken into the pan with vegetables. Toss in the chili sauce, vinegar, sugar, chili flakes, and sliced green chilies. Stir-fry for another 2–3 minutes until everything is well coated.
