- 2 cups ripe tomatoes, chopped
- 1 cup onion, finely chopped
- 1 cup brown sugar
- 2–3 green chilies, chopped
- 1/2 cup vinegar
- 1 tablespoon ginger, grated
- 1 teaspoon garlic, minced
- 1 teaspoon cumin powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a saucepan, combine the chopped tomatoes, onions, and green chilies. Cook over medium heat until softened, about 5-7 minutes, stirring occasionally.
- Add the brown sugar, vinegar, grated ginger, minced garlic, cumin powder, salt, and black pepper. Stir to combine.
- Bring the mixture to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally, until thickened.
- Remove from heat and let cool completely, then transfer to a clean jar for storage.
Notes
Adjust the spice level by varying the amount of green chilies. Fresh ingredients yield the best flavor.
