Ingredients

  • 2 cups ripe tomatoes, chopped
  • 1 cup onion, finely chopped
  • 1 cup brown sugar
  • 23 green chilies, chopped
  • 1/2 cup vinegar
  • 1 tablespoon ginger, grated
  • 1 teaspoon garlic, minced
  • 1 teaspoon cumin powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a saucepan, combine the chopped tomatoes, onions, and green chilies. Cook over medium heat until softened, about 5-7 minutes, stirring occasionally.
  2. Add the brown sugar, vinegar, grated ginger, minced garlic, cumin powder, salt, and black pepper. Stir to combine.
  3. Bring the mixture to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally, until thickened.
  4. Remove from heat and let cool completely, then transfer to a clean jar for storage.

Notes

Adjust the spice level by varying the amount of green chilies. Fresh ingredients yield the best flavor.
