- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract (optional)
- ½ cup powdered sugar, for coating
- Gel food coloring in pastel shades
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together the flour, baking powder, and salt in a medium bowl.
- Beat the softened butter and granulated sugar until light and creamy in a large bowl.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla and almond extracts.
- Fold in the dry ingredients until a thick dough forms.
- Divide the dough and mix in pastel gel food coloring to each portion.
- Chill the colored dough for at least 30 minutes.
- Roll tablespoon-sized balls of dough in powdered sugar.
- Place cookies 2 inches apart on a baking sheet and bake for 10–12 minutes.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
