Description

Light and airy cookies with a delicate crunch and a soft chewy center, dusted in powdered sugar for a vibrant springtime treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional)
  • ½ cup powdered sugar, for coating
  • Gel food coloring in pastel shades

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking powder, and salt in a medium bowl.
  3. Beat the softened butter and granulated sugar until light and creamy in a large bowl.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla and almond extracts.
  6. Fold in the dry ingredients until a thick dough forms.
  7. Divide the dough and mix in pastel gel food coloring to each portion.
  8. Chill the colored dough for at least 30 minutes.
  9. Roll tablespoon-sized balls of dough in powdered sugar.
  10. Place cookies 2 inches apart on a baking sheet and bake for 10–12 minutes.
  11. Cool on the baking sheet for a few minutes before transferring to a wire rack.
