Description

A flavorful bowl featuring marinated steak, sweet potatoes, fluffy rice, creamy avocado, and a zesty cilantro-lime sauce.


Ingredients

  • 1 lb marinated steak (sirloin, ribeye, or flank)
  • 2 medium sweet potatoes, diced
  • 1 cup fluffy rice (white or brown)
  • 1 avocado, sliced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1/4 cup sour cream or Greek yogurt
  • Salt and pepper to taste
  • Olive oil for roasting

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare sweet potatoes by tossing them in olive oil, salt, and pepper.
  3. Spread them evenly on a baking sheet and roast for 25-30 minutes.
  4. Cook the rice according to package instructions while sweet potatoes roast.
  5. Heat a grill pan or skillet over medium-high heat and sear marinated steak for 4-5 minutes per side.
  6. Let the steak rest for 5 minutes before slicing it thinly against the grain.
  7. Combine sour cream or yogurt, cilantro, and lime juice in a bowl to make the sauce.
  8. Assemble the bowl with rice, sweet potatoes, sliced steak and avocado, then drizzle with the creamy sauce.

Notes

Can be customized with additional toppings like roasted corn or black beans. Leftovers can be reheated for delicious meals.
