- 1.5 kg Chicken Thighs & Drumsticks (Bone-in, skin-on)
- 2 tablespoons Orange Zest
- 1 cup Orange Juice
- 1/4 cup Cider Vinegar
- 1/2 cup Brown Sugar
- 1 tablespoon Dijon Mustard
- 2 tablespoons Olive Oil
- 1 teaspoon Ground Cinnamon
- 1 teaspoon Allspice
- 1 teaspoon Ginger
- 1 whole Star Anise
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 cup Leafy Greens (for garnishing)
- 2 pieces Orange Wedges (for garnishing)
Instructions
- In a large jug, combine orange zest, orange juice, cider vinegar, brown sugar, Dijon mustard, olive oil, ground cinnamon, allspice, ginger, salt, and black pepper. Stir until well mixed!
- Place chicken thighs and drumsticks in a ziplock bag with the marinade. Seal well, ensuring the chicken is thoroughly coated. Ideally, let it marinate in the fridge for 24 hours, or at least 3 hours if time is tight.
- Preheat your oven to 200°C (390°F) to prepare for roasting.
- Line two baking trays with foil and parchment paper. Arrange the marinated chicken pieces on the trays and pour any leftover marinade over them for extra flavor.
- Bake the chicken uncovered for 30 minutes, watching for a lovely golden color.
- Continue baking for another 20 minutes, basting every 10 minutes to encourage a sticky glaze. Rotate the trays halfway through for even browning.
- Before serving, give the chicken a final baste with the pan juices for an extra layer of flavor and shine.
