Description

Deliciously moist muffins filled with juicy strawberries and a creamy cream cheese center, perfect for breakfast or dessert.


Ingredients

  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 cup strawberries, chopped
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  3. Mix the melted butter, egg, and vanilla extract in another bowl until smooth.
  4. Combine the wet and dry ingredients, stirring gently.
  5. Fold in the chopped strawberries.
  6. Beat the cream cheese with powdered sugar until smooth.
  7. Spoon batter into muffin cups, add cream cheese filling, and top with more batter.
  8. Bake for 18-20 minutes, until a toothpick comes out clean.
  9. Cool in the tin for a few minutes, then transfer to a cooling rack.

Notes

For a lighter texture, substitute melted butter with neutral oil. Use fresh strawberries for best results.
