  • 1 cup fresh strawberries, chopped
  • 1/2 cup brown sugar
  • 1/4 cup oats
  • 1/4 cup butter, softened
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the flour, granulated sugar, baking powder, and salt.
  3. In another bowl, blend the cream cheese, melted butter, eggs, and vanilla extract until smooth.
  4. Combine the wet and dry mixtures, mixing until just combined.
  5. Gently fold in the chopped strawberries.
  6. For the streusel topping, mix brown sugar, oats, softened butter, and cinnamon in a separate bowl until crumbly.
  7. Spoon the muffin batter into the prepared cups and sprinkle with streusel topping.
  8. Bake for 18-20 minutes or until a toothpick comes out clean. Let cool slightly before serving.

Notes

For a make-ahead option, prepare the batter and refrigerate overnight. You can also substitute strawberries with other fruits like blueberries.
