- 1 cup fresh strawberries, chopped
- 1/2 cup brown sugar
- 1/4 cup oats
- 1/4 cup butter, softened
- 1/2 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix the flour, granulated sugar, baking powder, and salt.
- In another bowl, blend the cream cheese, melted butter, eggs, and vanilla extract until smooth.
- Combine the wet and dry mixtures, mixing until just combined.
- Gently fold in the chopped strawberries.
- For the streusel topping, mix brown sugar, oats, softened butter, and cinnamon in a separate bowl until crumbly.
- Spoon the muffin batter into the prepared cups and sprinkle with streusel topping.
- Bake for 18-20 minutes or until a toothpick comes out clean. Let cool slightly before serving.
Notes
For a make-ahead option, prepare the batter and refrigerate overnight. You can also substitute strawberries with other fruits like blueberries.
